-Banana Bread (GF, RSF)-

For everyone requesting gluten-free recipes, here is one I love! Most gluten-free baked good recipes that I have tried have been grainy and dry. While this one is slightly grainy (something you can’t really dodge when using GF flour), it is super moist and the banana flavor is amazing!  I also found that topping each slice with some vegan butter (earth balance is GF) helps give a smoother mouthfeel to combat that GF grainy-ness.

I also decided to make this refined sugar free, because… why use processed sugar if you have unrefined products in your pantry to use instead!? Not to mention, maple syrup tastes amazing with walnuts! Try toasting the walnuts beforehand for a stronger walnut flavor throughout the bread!
